Motivation

The motivation to eat good, is the hardest part for me. I notice that when I don't care about what I eat, I don't care to go and workout like I should. I need to get back to being motivated me on my eating. Does anyone have any great healthy recipes that are fairly inexpensive? I need all the help I can get right now.

I have been following your blog a bit and I have a few good recipes to try. They are weight watcher ones but they work and are filling and good.

Mexican Soup
1 lb ground beef or turkey
1 can pinto beans
1 large onion
1 can chili beans
1 pkg Hidden Valley Ranch mix
1 can corn
1 pkg taco seasoning
1 can stewed tomatoes Mexican recipe
1 can stewed tomatoes regular

Brown meat and drain. Cook onion in meat until tender. Add ranch and taco seasoning. Add other ingredients without draining. (I do drain the corn and I add black beans so you can add and subtract as you see fit). Simmer 1 hour or throw in your crockpot for the day. (I freeze the left over for another day)

Chocolate Dipped Fruit (this is nice when you have a sweet craving)

You make up Sugar free chocolate pudding and dip strawberries, blue berries, raspberries, or any other fruit that you like into it and it is REALLY good. (I have had it 5 times in the last 2 weeks already).

Parmesan Turkey Meatloaf

1 Tab Olive Oil
1 onion chopped
1 lb ground turkey
4 slices whole wheat bread made into fine crumbs (I toast it then crumble it)
½ c fat free milk
1 egg white
3 Tab ketchup
2 Tab grated parmesan cheese
1 tsp minced garlic
1 Tab fresh chopped basil or ½ tsp dried
¼ tsp dried thyme
¼ tsp pepper

Preheat oven 350 spray a 8 x 5 in loaf pan with Pam. In a small skillet heat oil and sauté the onion until tender, 4-5 min. In a medium bowl combine onion, turkey, bread crumbs, milk, egg white, ketchup, cheese, garlic, basil, thyme, and pepper; blend well. Shape into a loaf and transfer to the pan. Bake until browned and cooked through, 50-60 min. Let stand 10 min then cut.
Yields 8 servings. 181 calories, 9 g fat, 1 g fiber (Good on sandwiches later). Good luck!
